Ingredients:
1/2 a carrot, chopped
2 tbsp rice wine vinegar
1 tbsp olive oil
1/2 tbsp chopped ginger
1/2 tbsp honey
1/2 tbsp tahini
Salt and pepper, to taste
A dash of sesame oil
1-1/2 cups spinach, chopped fine
1 cup broccoli, chopped fine
1 cup red cabbage, chopped fine
1/2 cup carrot, chopped fine
1/2 cup coriander leaves
2-3 tbsp chopped spring onions
1/2 an avocado, diced
Procedure:
In a food processor or blender, pulse the carrot, vinegar, oils, ginger, honey, tahini, salt and pepper until a smooth salad dressing forms. Taste and add more seasoning to suit your taste preferences.
In a large bowl, add the spinach, broccoli, cabbage, carrots, coriander, spring onions and avocado. Toss to combine. Serve with a drizzle of salad dressing.
