Raw mangoes are found in abundance in this summer season. Known for their tart taste, these carbohydrates have a low glycemic index and that means it has little effect on blood sugar. Instead of slicing it up to eat with chilli powder and salt, try this easy, spicy salad recipe.
Ingredients:
3 red or green chillies, chopped
2 cloves of garlic, chopped
1/4 cup soy sauce
Juice of half a lime
2 tbsp vegetable oil
2 tbsp brown sugar
4 raw mangoes, thinly sliced
2 onions, sliced
1 carrot, thinly sliced
1/2 cup roasted peanuts, chopped
1/2 cup coriander leaves
1/4 cup mint leaves
1 tbsp toasted seasame seeds
1/4 cup diced or shredded chicken, cooked (optional)
Directions:
Blend together the chillies, garlic, soy sauce, lime juice, oil and brown sugar until a smooth salad dressing is formed. In a large bowl, mix together the mangoes, onions, carrots, peanuts, coriander, mint, seasame seeds and chicken, if using. Pour the dressing over the salad and toss well. Season with salt and pepper to taste.
